I know I haven’t posted in years, but this beet salad is so good, it’s brought me out of retirement! I had the original version at the Happy Gnome in St. Paul, MN last Christmas during a record-breaking cold winter. After 3 months in the tundra, I returned home to NYC and successfully recreated it with a honey dijion dressing, goat cheese, toasted pecans, and, of course, BEAUTIFULLY roasted beets! It was my first time cooking beets of any kind so I had no idea how long it would take, but trust me, it’s worth the wait! So hearty, so tasty! Great for winter. Great for anytime! Enjoy!
